Blue Top Ironbark
Blue top ironbark is our most popular high-quality ironbark honey. Slightly sweeter and lighter than other types of honey, it has elegant taste and soft aroma. Blue top (Eucalyptus fibrosa nubilis) blooms from late autumn to winter (May to September). Blue top honey is harvested in October.
Grey ironbark
Grey ironbark is a kind of higher quality honey, which is light amber, with excellent warmth and subtle fresh butter flavor. The flowering period of greyironbark (Eucalyptus paniculata) is complete in winter and summer (June to January), and honey is harvested in November.
Spotted Gum
Spotted gum is a kind of unique honey with a mellow taste of Australian shrubs. It is winter honey. When sprinkled with a thin layer or added to dishes and jam, it will show a distinctive neutralizing taste, and has a warm feeling, enhancing the flavor of cooked meat. It's also delicious. Spotted gum (Eucalyptus Corymbia maculate) is native to the coast of New South Wales. Its flowering period is from autumn to winter, and it only blooms once every four years. Therefore, it is a rare honey, which can only be supplied regularly.
Blackbutt
Blackbutt is a good choice when you need a rich honey flavor. It has different peculiar flavors and medium concentration honey varieties. It is not as strong as woodwood, plus the fragrance of flowers and similar health benefits, making it a highly sought after high-quality honey. It is soft, dense, medium dark, and rich in minerals and antioxidants. It is a kind of floral honey, with the aroma of shrub flowers and molasses. Blackbutt has a moderate caramel and molasses flavor. Blackbutt (Eucalyptus pilularis) has shining white flowers and dark green leaves. It blooms in spring and summer (October to March), and can be harvested in March. The amount of Blackbutt honey we produce is very limited, so we can only provide this rare, soft and floral honey on a regular basis.
